Bowerbird Dining and Events at Byron Bay Golf Club is the passion project of Tom Bower, who grew up surrounded by great food and hospitality.
Tom kicked off his cooking career with an apprenticeship in Brisbane and the Gold Coast, before heading to Europe to really sharpen his skills—working everywhere from cozy bistros to top-tier Michelin Star restaurants. That experience gave him a whole new perspective on food and hospitality.
When he returned to Australia, Tom made Byron Bay home. He first took the reins as Head Chef at the iconic Balcony restaurant, and later helped shape the menu and direction at the Italian Diner in Bangalow—earning them a Good Food Guide Award Chef’s Hat in the process.
Since then, Bowerbird has grown into something pretty special. Under Tom’s guidance, we’ve built a catering team that’s all about fresh, seasonal dishes and supporting local farmers and suppliers. It’s food you can feel good about—delicious and community-driven.
You’ll find Bowerbird nestled in the heart of the Byron Bay Golf Club. It’s a go-to spot for locals and visitors alike, blending great food, relaxed vibes, and genuine service.
